On 31 October at 10 am, as part of the Harvest Festival, Um Mami and the Global Diversity Foundation hold an Apple Preservation Workshop in Sidi Ghanem, exploring preservation and fermentation through simple, practical techniques inspired by Morocco's autumn harvest.
The morning also opens a conversation on seasonality, biodiversity and responsible food practices, and ends around the table with a seasonal sharing-style lunch prepared by the Um Mami team, with products from local cooperatives.
The workshop is part of the programme of the Harvest Festival, from 28 October to 1 November.
