Safran by Koya sits on a rooftop in the medina with the Koutoubia minaret filling the skyline, and most guests come as much for the view and the show as for the food. The kitchen is led by Executive Chef Mouhssine Nouni, trained at Yoshi in Monaco and Ledoyen in Paris, alongside Deputy Chef Abdelkrim Siklan, a Marrakech native who spent nearly a decade at the Royal Mansour. Together they work a Mediterranean-leaning carte that swings from lamb tagine with prunes and saffron seafood risotto to grilled octopus, prawn linguine, and Black Cod Saikyo Miso. The range is broad on purpose: Safran treats the Mediterranean rim as one continuous coastline, borrowing freely from Morocco, Italy, Greece, Spain, and Turkey. From around nine each evening the restaurant transforms. Gnawa musicians, oriental dancers, traditional folk performers, and DJs take over, and the energy shifts from dinner to celebration. The show runs until late and the crowd responds in kind. Tables fill quickly, the music is loud, and the terrace becomes one of the more electric rooms in central Marrakech. Cocktails are strong and well-received; the wine list holds its own. Safran works best when approached as a full evening out rather than a quiet dinner. The Koutoubia views at sunset set the tone, the food provides a solid foundation, and the entertainment carries the night. Reservations are essential, a dress code applies, and requesting a terrace seat away from the speakers is worth the effort.
