Nommos occupies a stretch of Boulevard Mohamed VI in Agdal and runs from dinner service through to the early hours, combining a full restaurant with nightly live entertainment and a rooftop lounge. The ground floor centres on an open kitchen where the brigade works in full view, a setup that doubles as theatre before the actual shows begin. The menu navigates between a Mediterranean steakhouse and a sushi counter, with a dedicated sushiman preparing rolls and poke bowls alongside aged cuts of Black Angus and Wagyu sourced from Moroccan, French, and Australian farms. Truffle rigatoni, sesame-crusted salmon, grilled prawns in Thai sauce, and burrata with tomato and avocado fill the middle ground for those who land between the two poles. The wine and champagne list is curated to match, and the signature cocktails are infused and mixed in-house. But the food is only part of the equation. Every evening brings a programme of live performance: musicians, vocalists, dancers, percussionists, gnawa artists, and acrobats rotate through the room, building from ambient accompaniment early on to a full-scale dinner show as the night unfolds. Thursday through Sunday adds violinist, saxophonist, and belly dancers to the mix. Upstairs, the Sky Lounge opens onto the rooftop with panoramic views over the city, a soundtrack of resident DJs, and a cocktail menu designed for the hours after the last plate is cleared. The design throughout is contemporary and luminous, with natural materials, sober lines, and an elegance that borrows from the Mediterranean without overstatement.
