The dining room is wood-clad and sleek, set on an upper floor with views that reach the Atlas Mountains, and it operates on the same Japanese-Peruvian axis that has defined the Nobu kitchens worldwide. The signature black cod miso, marinated in den miso for several days before baking, arrives with the same precision it does in London or Tokyo. Yellowtail sashimi with jalapeño delivers its clean, sharp bite. Rock shrimp tempura is tossed in a creamy spicy sauce with yuzu and shiitake, a dish that remains one of the menu's reliable highlights.
