Overview

Nobu Restaurant sits inside the hotel of the same name in Hivernage, the brand's first property on the African continent. The dining room is wood-clad and sleek, set on an upper floor with views that reach the Atlas Mountains, and it operates on the same Japanese-Peruvian axis that has defined the Nobu kitchens worldwide. The signature black cod miso, marinated in den miso for several days before baking, arrives with the same precision it does in London or Tokyo. Yellowtail sashimi with jalapeño delivers its clean, sharp bite. Rock shrimp tempura is tossed in a creamy spicy sauce with yuzu and shiitake, a dish that remains one of the menu's reliable highlights. What shifts the Marrakech outpost beyond pure replication is a thread of local influence woven through the carte, with seasonal creations that draw on Moroccan ingredients without abandoning the framework of new-style Japanese cooking. The cocktail programme is extensive and well-matched to the food. Adjacent to the main room, the Nobu Bar and Lounge offers a lower-key register, with light bites, handcrafted cocktails, and seating on tangerine-hued sofas beneath low lighting. DJs take over on Thursday, Friday, and Saturday evenings. The interior throughout balances Japanese minimalism with Moroccan craft, from geometric patterns to handmade fixtures by local artisans.
