Overview
Le Namaskar is the fine dining restaurant at Palais Namaskar, positioned at the very heart of this Palmeraie resort where it overlooks the main pool and the property's sweeping expanse of scented gardens, ornamental lakes, and the Atlas Mountains beyond. The setting is unlike anything in the medina: a Feng Shui-inspired architecture blending Moorish arches and reflecting pools with contemporary interiors in a palette of earthy neutrals and warm stone. Both indoor and outdoor tables are available, the outdoor seats framed by the still water of the pool and the evening sky. The kitchen is led by Executive Chef Khalid El Goumani, whose menu is French at its foundation but shaped daily by Moroccan produce and market rhythms. Dishes move between classic technique and local instinct: wild seabass tajine with chermoula spices, scallops on artichoke mousseline with passion fruit beurre blanc, Atlas lamb rack gratinéed with herbs and rosemary jus, lacquered duck breast with orange endives and acacia honey. The risotto Jardin Namaskar arrives with black truffle and a parmesan tuile, a dish that belongs entirely to this address. Desserts follow the same logic of refinement without excess, among them a signature chocolate dome with vanilla ice cream. Pre-dinner drinks are served at the adjacent lounge bar, and for those who want to extend the evening, a hidden staircase behind a curtain leads to the rooftop NoMad Bar, where cocktails and panoramic Atlas views complete the night. Wines are well chosen, with Moroccan labels that pair confidently alongside French bottles. It is a restaurant that draws its quiet authority from the resort around it: unhurried, spacious, and entirely removed from the city's pulse.
