Le Marocain is the Moroccan restaurant at La Mamounia, housed in a three-storey riad set deep within the hotel's eight-hectare gardens. To reach it, guests walk along a gravel path beneath palm trees and orange groves lit by Moroccan lanterns, the scent of orange blossom thickening as the medina recedes behind them. Inside, the architecture takes over: carved cedarwood, zellige tiling, plasterwork dense with arabesques, and alcoves lined with velvet cushions that make each table feel like its own private room. A central patio with a lily pond anchors the ground floor, where candles flicker in lanterns and a trio of Andalusian musicians plays violin and oud. Chef Rachid Agouray has run this kitchen for over twenty-five years, and the menu reflects both deep familiarity and restless refinement. Dinner opens with the ftour ritual of harira, dates, chbakias, and sesame pastries. A Moroccan salad arrives in fourteen components, the confit tomatoes with sesame among the finest bites of the evening. Two tracks follow: a traditional carte of slow-cooked tagines, pastillas, and couscous, and a contemporary menu where lobster meets spinach fondue inside pastilla pastry and langoustine is braised with Morocco's warmest spices. Vegetables come from the hotel's own kitchen garden; seafood arrives daily from the Atlantic coast. The result is a restaurant that has been an institution for over thirty years without ever feeling preserved in amber. Desserts by Pierre Hermé bring French technique to Moroccan flavours, and La Mamounia's own gazelle horn pastry closes the meal alongside orange blossom sweets and fresh mint granita. The setting does the rest: this is one of the few restaurants in Marrakech where the architecture, the music, and the food arrive from the same tradition and carry the same weight.
