Kabana is a rooftop bar and restaurant perched at the edge of the medina, a short walk from the Koutoubia Mosque, whose illuminated minaret becomes the focal point of every table as the sun drops. The open-air terrace is dressed in a lush, tropical register: palm trees, rattan furniture, jungle-print fabrics, and brightly coloured banquettes create the feel of a hanging garden suspended above the city. An indoor cabana-style bar with playful, colourful decor provides a second anchor when the night air cools. The kitchen works under the creative direction of an Ibiza-born chef and leans Mediterranean, with Latin and Asian detours. Sharing plates, burgers, sushi from a dedicated chef, and a scattering of well-turned tapas form the core of a menu designed more for grazing than for focused dining. The truffle-and-parmesan fries have become a signature, and the brunch spread (shakshuka, Turkish eggs, homemade granola) draws a loyal weekend crowd. The cocktail programme is ambitious and varied, with a full-time mixologist behind the bar and a curated wine list running through Moroccan and French labels. Kabana's real draw, though, is the atmosphere after dark. Curated DJ sets build through the evening, live music nights rotate through jazz, salsa, and electronic acts, and by late evening the terrace can take on the energy of an open-air club with Koutoubia views.
