Overview

Les Deux Tours occupies three hectares of the Palmeraie along the Circuit de la Palmeraie in Douar Abiad, about fifteen minutes from the Medina. The property was conceived over thirty years ago as a series of private villas arranged like an Arabo-Andalusian village: ochre pavilions connected by cobblestone paths, arcades, vaulted passages, and gardens dense enough to lose yourself in. The plantings are mature now. Palms, orange trees, bougainvillea, and scented shrubs line every turn. Water moves through the grounds along narrow canals, feeding fountains, lily ponds, and hidden pools tucked behind walls. Four-poster daybeds appear in shaded clearings between the trees. The main pool sits at the centre of the property, heated and partially enclosed by rough stone walls that give it the feel of a structure the garden grew around rather than one placed into it. Loungers ring the perimeter, and La Pergola serves seasonal plates and Moroccan specialities at its edge through the afternoon. The kitchen works from a potager on the grounds. Dinner moves to Le Salammbô, where the cooking turns more composed: scallops with saffron emulsion, lamb confit with quince and tfaya, plates that lean French in technique and Moroccan in flavour. Two bars round out the evening, one with open fireplace and terrace over the gardens. Forty-four rooms and suites occupy the pavilions, each one different. Lower categories open onto patios and gardens through arched doorways. Pool suites, at 125 square metres, function as private riads with their own walled gardens and plunge pools. Interiors run through zellige, carved wood ceilings, tadelakt walls, and rare marble. The spa houses a hammam, steam rooms, and treatment alcoves built from adobe in the garden. A barbershop operates beneath the palms. Les Deux Tours is the kind of Palmeraie property where fifty guests can be staying and the grounds still feel empty, and where the architecture treats water, shade, and privacy as the same thing.
